  • 2 tablespoon freshly squeezed lime juice
  • 3 tablespoons simple syrup
  • ½ cup fresh mint leaves, tightly packed
  • ¼ cup club soda
  • 4 ounces white rum, such as Bayou Silver Rum
  • 3 cups ice cubes
  • 2 sprigs of mint, for garnish
  1. In the container of a blender, add the lime juice, simple syrup, mint, club soda, and rum. Fill the container with ice and blend on high until the ice is crushed.
  2. Pour into two tall glasses and garnish each with a sprig of mint.
Simple syrup is simple: combine equal parts sugar and water and simmer until dissolved; cool the syrup before using.
